Today we invited our friends Barb and Lisa and Janet over for dinner. I am going to try Alinda's recipe that she served us consisting of salmon, pasta salad and instead of the apple pie..cherry pie from Willamette Valley Farms.
Here is the Pasta Recipe called Farmer's Market Pasta Salad:
2 cups halved baby heirloom tomatoes
2 small zucchini, diced
1 small red bell pepper cut into strips
1 cup fresh corn
1 cup diced firm peaches
1/2 cup thinly sliced green onions
1 package penne pasta
2cups shredded smoked chicken
1/3 cup torn fresh basil
1/3 cup torn fresh cilantro
toss together first 7 ingredients, prepare pasta and add to mixture. Toss gently and add Parmesan Vinaigrette dressing or whatever type you prefer.
I also added sliced black olives and skipped the chicken. Instead of mixing in peaches, added sliced to top and mixed the basil and cilantro in with mixture.
Bought a large salmon at Costco and sprinkled with lime juice before cooking at 425 for 10 minutes or until almost done.
Then spread with a mixture of chopped parsley, garlic,parmesan and sliced almonds. Then put back in oven for 10 minutes.
Barb, who does not like salmon found it to be delicious. These recipes are definitely a keeper.
Barb and Lisa were our neighbors in Salem and when we started RV traveling and wanted to rent our home furnished,they referred friends on two occasions that worked out great.
Janet as I have mentioned was and is my walking partner and good friend. So glad we got in two walks this visit.

Today we took Ellen another very good friend who was our neighbor in Salem and is now in assistant living to lunch.Her favorite place is McGrath's on Center St. Took her a bouquet of flowers to brighten her day.
Ellen will soon be 90 and looks much younger. She is a very sweet lady and enjoy her company.
